After three years on wheels as a food truck, Ripe Cuisine is putting down roots at Braun Enterprises' redevelopment of the Heights Waterworks Reservoir on 19th and Nicholson. Owner Stephanie Hoban said the physical location will occupy just over 2K SF. Ripe Cuisine will continue to operate its food truck while the restaurant is constructed. Once the restaurant is completed in the late summer or early fall, the truck will be available at farmers markets and large events.

Since 2013 Hobon has operated Ripe Cusine, serving up creative plant-based dishes to hungry Houstonians. Hobon looked for restaurant space in Montrose, Upper Kirby and the Heights before deciding on the historic redevelopment at the Heights Waterworks Reservoir.
Braun plans to turn the property into a collection of four free-standing restaurants, a new 5K SF retail building and a lawn area.
