Success is tricky in the restaurant game. About making a go of it in Charlotte, Billy adds that: 1) A successful restaurant is driven by quality fare, location and management, but the essence is delivering a perceived value to the customer. 2) The operator who succeeds is one who realizes the evolution of a concept is ongoing and has the foresight to continually make the experience better. 3) Operators who lack that ability would be better suited to partner with a national chain that has proven methods of success. | ||
