We got to do a lot of meet 'n greet and news gathering during our coffee schmooze at our Creative Office & Tech event this week. Blue Holdings Capital's Lee Carroll and Kris Knecht tell us they've been helping finance a lot of franchise restaurant expansion, including Uncle Maddio's Pizza Joint, an Atlanta-based fast casual eatery with plans to open 34 locations this year (we will test every single one), and ultimately 165 stores across the country (it operates 18 now, with six in Atlanta).
