We had its creators, Cole Thompson and Josue Vera, show off their creation yesterday at Maki Fresh, the new fast-casual sushi restaurant that just opened in Peachtree Battle. Maki Fresh is the brainchild of John Cassimus, the former head of Zoe's Kitchen, who expanded with his second restaurant from Birmingham. | Maki Fresh's president Jennifer Mims, about to dig into the sushi and a bowl of grilled tangy Shishito peppers, tells us John is already scouting Atlanta for another five to seven locations. Jennifer says the chain will likely seek sites within the Perimeter with strong demographics and high daytime traffic. But she says finding those sites has been a challenge in Atlanta with other restaurants seeking prime locations. ?The restaurant industry seems to be rebounding, especially in the fast-casual category,? she says. |
