Le Dip Lands a Pastry Giant
Le Diplomate is known for its bread basket, energetic atmosphere, seafood towers and more. Now add dessert to the list that makes the Logan Circle spot one of the busiest and buzziest: Fabrice Bendano has joined the team as executive pastry chef. His exotic vacherin, tasting of a tropical vacation, and decadent tarte fine chocolate-caramel, are two terrific ways to end a meal. We spent the day with Fabrice learning to make the restaurant’s signature gougeres, profiteroles and éclairs. Fabrice brings experience from Michelin-starred restaurants in Europe, including Le Louis XV in Monte Carlo and Ledoyen in Paris. Locally, Fabrice led the pastry programs at Citronelle and Adour at the St. Regis Hotel.
