José Andrés’ latest restaurant, China Chilcano, is now open in Penn Quarter. Here’s what you need to know, by the numbers.


25: The number of piscos they’ve curated at the bar. Drink the grape-based spirit straight or in one of Jasmine Chae’s well-crafted pisco sours.

268: The number of funky light bulbs adorning the restaurant designed by Spanish architect/designer Juli Capella.

300: The number of gallons of saltwater in the restaurant's fish tank that is currently home to lobsters on The Green Mile waiting to be consumed.


3: The number of types of cuisine incorporated into the vibrant menu—Peruvian Criollo, Japanese Nikkei and Chinese Chifa. This is a reflection of the significant influence Chinese and Japanese immigrants have had on Peruvian culture.
