José Andrés Gets Cozy

We snapped José Andrés giving his team a pep talk before the opening of his latest restaurant—America Eats Tavern inside the Ritz-Carlton Tyson’s Corner. The setting is all about Americana, and quite possibly the coziest spot we’ve seen from the Spaniard, with its presidential pillows, vintage handlebars, and open kitchen bearing the inscription “We the People.” Executive chef Nate Waugaman, formerly of Tallula, tells us he’s most excited about serving Scrapple for breakfast and a scallop dish that will “revolutionize blackened seafood." Cuisine that celebrates America is combined with an all-American wine list, and naturally, many are from vines in Virginia. America Eats Tavern is now open and serves breakfast, lunch and dinner.
