A Treat: Dining with Maria

Speaking of RAMMY winners... Maria and Fabio Trabocchi’s flagship restaurant Fiola also received accolades, taking home the award for formal fine dining restaurant of the year. The award comes as Fiola celebrates its third anniversary in DC.

We dined there Tuesday to catch up with Maria and were joined by EagleBank vice chairman Robert Pincus. Any time spent with Maria is a giant hug of hospitality. She’s so dedicated to her mission of making everyone feel welcome that she never rests, even when she’s home on vacation in Mallorca, Spain. You’ll find her logging into OpenTable. “I look to see who’s coming in and make little notes—especially if I notice a couple is celebrating their first wedding anniversary, because those are especially adorable,” she tells us.

The meal was a clinic on Italian fine dining, starting with some of the finest charcuterie in the city followed by oysters swimming in Amalfi limoncello and oyster water granita. But, it was the pasta dish that stood out. Sand dollar-sized black truffle shavings topped sweet corn agnolotti dotted with chanterelles. But don’t get too attached to these dishes: “We print lunch and dinner menus daily at all three of our restaurants.” Maria and Fabio are also responsible for Fiola Mare and Casa Luca.
