First Vegan Doughnut Shop Opens In Portland

How to survive in the difficult retail climate? Highly focused specialization might be one answer. Last week a highly specialized doughnut shop opened in Portland as the first of its kind in the city: Doe Donuts, a vegan doughnut shop.

The shop, at 8201 SE Powell, is the creation of two professional bakers: Carly Sitner, who has worked in restaurants, hotels, cafès, large-scale production and natural foods grocery in various parts of the country, and Crystal Wegener, an Oregon native and a graduate of the Oregon Culinary Institute with a degree in baking and pastry management.

The Eater reports the shop sold 1,000 doughnuts on its first day within four hours. According to the owners, ingredients include organic fair trade cocoa, unbleached flours, natural nut butters with no added sugars or oil, and aluminum-free baking powder.
