Chantal helms Shaw’s ham and sherry bar that’s become a popular haunt for sherry newbies and enthusiasts alike. She says, “sherry is a cocktail in a glass,” meaning that it’s far more complex than other wine, with 307 aromatic compounds. In addition to amassing an impressive collection of different styles, she’s curated a cocktail list with depth. Try a few of her favorites: The Fino Garlic-Back made with Fino sherry and a side of pickled garlic juice; the Oloroso Float using Oloroso sherry, hazelnut gelato, Chinotto soda and nutmeg; or a new one called the Spanish Bomb that utilizes the bar’s coffee on draft.
