It’s the celebration of Kyle Bailey and Birch & Barley's pure obsession with pork. “I have so much respect for this animal; it has the most flavor and you can use every single part of it,” he tells us. We snapped Kyle and his team breaking down a 175-pound pig in preparation of MayHam—a series of intimate dinners for four to six people that feature a sucking pig stuffed with ramps, lemon, fennel and pine nuts, plus side dishes. Only a few will be privy to this experience: They’re only offering one dinner per week at Birch & Barley throughout the month of May and the cost is $95 per person.
