Glendon Hartley—Cava Mezze

Glendon pays close attention to the Greek flavors flying out of the Cava Mezze kitchen when crafting cocktails. For example, "Fig" uses rum, lemon, figs, mint and averna. “When you smell the syrup we use, it actually comes off like a freshly cooked Italian sausage because of the fennel seeds,” he tells us. Another favorite is cardamom. “I put it in everything because it pushes other flavors forward." That’s not to say Glendon’s drink list is strictly Mediterranean. Rather, it draws from all corners of the globe. In addition to running the show at Cava Mezze's multiple locations, Glendon recently designed Ocopa's opening cocktail menu.
