A Half Smoke Takes It

Cava Mezze chef Dimitri Moshovitis won Lamb Jam Sunday with his lamb shoulder half-smoke topped with lamb chili and mustard tzatziki. He will represent the District in the finals on Sept. 28 in New York City hoping to be named Lamb Jam Master. The national competition put on by American Lamb gives chefs the opportunity to showcase the protein's versatility. Dishes were divided into four categories: Mediterranean, Middle Eastern, Asian and Latin. Your dining editor served as one of the judges, naming Dimitri’s dish best in show in addition to a winner in each ethnic category via blind taste test. City Perch chef Matt Baker cooked outside of his comfort zone, winning the Asian category with a Malaysian lamb rendang. The event took place at Union Market’s Dock 5.
