Only a handful of retail and service spaces remain after Westward Broker's Lindsey Stapay filled Center Village with homegrown Summit County operators, including Sauce on Copper, Sweet Soy and Black Diamond Grille, while Charter Sports and Copper Mountain Mercantile expand their footprints

BISWIRE/Aug. 6, 2026 — Lindsey Shorthouse Stapay, founder of Westward powered by eXp Realty, is closing in on full occupancy at Center Village at Copper Mountain Resort after nearly two years spent recruiting and vetting locally owned restaurant, retail and service operators on behalf of property owner Big V Property Group. With the restaurant lineup now complete and only a handful of spaces left to lease, the story at Copper's commercial core is shifting from “who's next” to “what's left.”

Since taking over curating leases for Center Village in 2024, Stapay has recruited a string of homegrown Summit County brands, most already established elsewhere in the county rather than new to the market. The most recent arrival, Sauce on Copper, opened in November 2024 as the Italian restaurant group's fourth Colorado location — joining its Silverthorne, Avon and Breckenridge sites — and has since earned a "Best of Summit" nod for its dining room and mountain-view patio.

Stapay brokered deals bringing Sauce at Copper Village a 2025 award winning restaraunt, Sweet Soy; noodle- and rice-bowl concept already popular with Copper's workforce and visitors; Moon Fries, a grab-and-go favorite; and Superfruit Republic, known for its smoothies and fruit bowls. Black Diamond Grille rounds out the lineup with hearty breakfast fare. With those additions, Center Village's restaurant scene is essentially full — the one gap left is a coffee shop.In addition to expanding two existing Center Village tenants — outdoor outfitter Charter Sports and gift-and-apparel shop Copper Mountain Mercantile — within the village, a sign Stapay points to as validation of the broader tenant mix.

“We've filled every restaurant space in Center Village with local operators who've already proven themselves and are now expanding across Summit County,” said Stapay. “That's the story I want brokers and operators in Denver to hear: this isn't an untested resort food court, it's a curated village of brands people already drive to Frisco and Breckenridge for.”

Currently, a handful of spaces between 800 and 4,300 square feet remain available at Center Village. Stapay is prioritizing a coffee shop, an entertainment concept and additional service operators to round out the mix. More than 5 million visitors pass through Center Village annually, and Stapay says the remaining spaces represent one of the last opportunities to secure ground-floor retail in a resort village that has otherwise reached near-full lease-up.
